Ingredients for the dough:

  • Icing sugar - 40 g;
  • Vanilla sugar - 1 tablespoon;
  • Sifted flour - 150 g;
  • Salt - 1/2 tsp;
  • Non-greasy butter - 100 g;
  • Egg yolk - 1 pc;
  • Ground almonds - 40 g.

Ingredients for the filler:

  • Eggs - 3 pieces;
  • 1 lemon;
  • Flour - 60 g;
  • Sour cream - 200 g;
  • Curd mass - 500 g;
  • Sugar powder - 60 g.

  1. We must prepare the dough for the cake. Put all ingredients except egg yolk in a large bowl and stir. The resulting mass will be a bit like bread crumbs. Then put the egg yolk in the bread crumbs and knead the dough with quick movements. Knead the dough for about an hour and a half to send to the refrigerator.
  2. Bring the oven temperature to 200 degrees. Frozen dough roll out is not very thin layer and put in a form with high side walls. Pierce the base of the dough with a fork and bake it without opening the oven for about 10 minutes.
  3. Then you need to prepare the filler. Separate the yolk from the whites and rub the curd with a sieve.If the curd mass is composed of small grains, then it can be not wiped.
  4. Take a lemon and remove it from the zest using a grater with the smallest nozzle.
  5. The resulting curd mass should be mixed with sour cream, then pour flour into it. Lastly pour the zest into the mixture. The filler must be well stirred. Egg white should be whipped up to the formation of elastic scallops and add to the mixture prepared for the filling. Put the filler in the form on the base.
  6. Bake the cake for about 40 minutes, until the filling mixture is thick to the touch. If the top is browned, and the cake itself is not yet ready, then you need to cover its surface with foil. It is important that the cake becomes golden evenly.
  7. Cake should be served chilled. You can decorate it with slices of canned pineapples, and sprinkle it with powdered sugar on top of your choice.
