How to cook red currants?
Red currant is such a wonderful berry that even if you have only one bush, it will be quite a lot. But usually at the dachas of this berry there is more than one bush, which at the end of summer leads to the question of how to cook red currants.
There are many options that you can do with it - eat, freeze, boil up stewed fruit or make jelly, which will be discussed below.
How to cook red currants so that it is not sour, but at the same time so that it does not become in the jar just an addition to sugar? It is important to respect the ratio of berries with sugar and do everything according to the recipe. Here are just some of them:
- Need: 800 gr. sugar, 2 kg. not quite ripe currants. The juice is squeezed out of the berries and boiled in small dishes. Half the sugar is gradually added, and the second half is gradually added at the end of cooking. When the jelly is ready, it is poured into small sterile jars, which are closed after full cooling with plastic caps.Readiness of jelly is checked with a wooden spoon - guide it along the bottom and, if the path remains, then it is ready.
- It will take: 2 kg. sugar, 1 kg. currants. The berries are crushed and mixed with 4/5 of the total sugar. Then all this is poured into small jars, filled with the remaining sugar and covered with plastic caps.
- This recipe is suitable for jelly, which is eaten a couple of times. A small amount of berries is crushed and juice is squeezed out of them. Add sugar to the juice at the rate of 1: 1 cup, mix and slightly heat this mixture until sugar is completely dissolved. The mixture is poured into small jars and closed with parchment or plastic covers.
