How to make a soup of lentils and baked vegetables

You will need
  • Red lentils - 150 g
  • Bulgarian pepper - 1/2 pcs.
  • Carrots - 1 pc.
  • Onions - 1 pc.
  • Tomato paste - 1 tbsp.
  • Garlic - 2 cloves
  • Spices, herbs, salt - to taste
We set the oven to warm up to 180 degrees. Wash vegetables: carrots and half of Bulgarian pepper. We clean the carrots and cut them in thick circles, remove the seeds from the pepper and cut them into large pieces. We put the vegetables in a bowl. On a fine grater, rub garlic (or skip through the garlic press) and add it to the chopped vegetables. Pour them with a tablespoon of olive oil, sprinkle with dried dill and mix thoroughly so that the oil is evenly distributed throughout the vegetables. Put them on baking paper and bake in the oven for 30 minutes.
While baked vegetables are being prepared, clean and cut onion into half rings. Heat a deep frying pan with a small amount of olive oil, add onion and fry until golden brown.Add one tablespoon of tomato paste, warm up. We pour in one and a half glasses of boiling water, we reduce fire. Add lentils into the water, stir and cook over medium heat for 10-15 minutes until lentils are soft.
We take out the vegetables from the oven, put them in the pan. Lentils with tomato paste and onions are also poured from the pan into a saucepan. Beat the soup with a blender to a puree-like state, add water if necessary. Season with salt, spices and herbs to taste.
