Consider this your grown-up (and nutritious!) snow cone: frozen melons with herbs and honey. Happy summer!
fresh mint, basil, or tarragon
fresh lemon juice
skinless, seedless honeydew, watermelon, cantaloupe, cut into chunks (about 5 1/2 cups)
- In a small saucepan, combine honey, 1⁄3 cup water, herbs, lemon juice, and 1⁄4 tsp salt and bring to a boil. Reduce heat and simmer (do not stir) until herbs wilt and turn bright green, about 1 minute. Let cool to room temperature, then strain, pressing all the liquid out of the herbs.
- In a blender, puree cooled syrup and melon until smooth. Pour into a metal 9- by 13-in. pan and freeze until set, at least 3 hours.
- When ready to serve, using a fork, scrape the surface of melon ice to create large flakes. Transfer to glasses; serve immediately.
