Salad with prunes in several variations

Prunes are not the most popular ingredient in salads. Nevertheless, there are several recipes in which this dried fruit goes well with other products, combining with them into a great cold snack.

Salad with prunes, carrots and peanuts

One of the most popular salads with prunes is beetroot, its recipe is known to many housewives, but a snack from prunes and carrots is not known to everyone. Try making this salad and make sure that it deserves no less glory. You will need: - 8-10 pieces of prunes; - 500 g of carrots; - ½ cup of peanuts; - 2 tablespoons of chopped green coriander; - 2 tablespoons of sesame seeds; - 2 tablespoons of sugar; - ½ cup of freshly squeezed orange juice; - cups of lime juice; - 1 teaspoon cumin seeds; - ½ teaspoon salt; - ½ teaspoon ground black pepper

Start cooking salad dressing.Put the sugar in a small saucepan and put it on medium heat, wait for it to caramelize, remove the saucepan from the heat and add the orange and lime juice. Return the dishes to the fire and cook, stirring until you cook light brown thick syrup. Add salt, pepper and cumin to it, mix and set aside.

Rinse carrots, peel and grate on a special grater with a thin straw. Boil the water, put the carrots in boiling water and boil for about 30 seconds, drain the liquid through a colander and dip the carrots in ice water. Drain the water through a colander again. Put the carrots in a salad bowl. Prune cut in half and add there too. Fry the peanuts in a pan, crush and sprinkle them on the salad. Sesame seeds, before adding them to the rest of the ingredients, also fry.

Season the salad, add the greens and mix thoroughly. Serve chilled.

Choose for salads fresh soft prunes. Dried fruits, of course, can be steamed in boiling water, but then they will be too watery and this will not benefit the snack.

Layered salad with prunes and chicken

Delicious and easy to get a chicken salad with prunes, seasoned with thick yogurt. In order for this snack was also spectacular, make it puff.You will need: - 2 boiled chicken breasts; - 12 prunes; - 200 g of champignons; - 1 head of onions; - 2 boiled chicken eggs; - 2 fresh medium-sized cucumbers; - 1 tablespoon of olive oil; - 150 g of thick yogurt; - 1 teaspoon Dijon mustard; - 1 tablespoon of freshly squeezed lemon juice; - salt, pepper.

Boiled chicken cut into small cubes, just cut the prunes. Onions clean, rinse and pat dry, chop into a cube. Wipe the mushrooms with a wet towel, chop. Fry the onions in olive oil until transparent, add the mushrooms and fry until all the liquid has evaporated. Chill.

Prepare the dressing by beating yogurt, lemon juice, mustard and pepper. Cut the cucumber into thin strips. Take a salad dish or, if you want to make an a la carte snack, a few glass vases. Lay the salad layer by layer - prunes first, then chicken fillet, pour dressing, put roasted mushrooms with onions and sprinkle again with dressing, then rub the eggs, pour the rest of the dressing on them and finish making the salad, putting a layer of cucumbers on top.

Dessert salad with prunes

In addition to snack salads with prunes, you can cook and dessert. Try the original recipe with alcohol. You will need: - 250 g of prunes; - 400 ml of hot strong tea; - 3 oranges; - 1 grapefruit; - 2 bananas; - 1 tablespoon of lemon juice; - 250 g of canned pineapples, sliced; - 2 tablespoons of brandy.

Remove prunes from prunes, put dried fruits in a bowl and cover with strong hot tea. Leave for 30 minutes, then drain the liquid and slightly squeeze the prunes. Fragrant and bright get a salad of prunes, onions and fennel. You will need: - 1 glass of coarsely chopped prunes; - ½ cup of freshly squeezed lemon juice; - 2 tablespoons of olive oil; - 1 tsp. Of balsamic vinegar; -ground black pepper; - 2 oranges; - 1 medium head of fennel; - 1 head of red onion; - 5 cups of young spinach leaves.

Put the prunes in a saucepan, pour in orange juice, season with salt and simmer for about 5 minutes. Drain the juice in a separate container, put the prunes in a salad bowl. Mix the oil, vinegar, salt and pepper with the juice, whisk together. From the orange, cut off the peel and cut the flesh, add it to the salad bowl. Finely chop the onion and fennel, add to the bowl, put the spinach in there, season and mix the salad.
