The high yield of eggplants is an excellent occasion to master the original recipe of vegetable cake. It does not need to bake, and the taste is excellent.
You will need:
- 2-3 eggplants;
- 2 large carrots;
- several tomatoes;
- large onion;
- 2-3 cloves of garlic;
- salt, pepper to taste;
- fresh herbs (dill, parsley, basil, cilantro)
Eggplants cut into slices or slices, and fry a little in oil. If your vegetables are slightly bitter, pre-soak them in salt water.
